Here, perfectly fossilized seashells of brilliant white limestone butt up against vineyards full of rich red marl and glowing golden sandstone; this is the mosaic of soil types that Xavier Cailleau calls home. The fifth-generation vigneron works with his wife Géraldine to biodynamically farm 24 acres with biodynamic and organic practices.
